Sweet & Spicy Roasted Vegetables

INGREDIENTS:
2 lbs mixed vegetables
(pumpkin, carrots, onions, sweet potatoes, fennel bulb, or any seasonal vegetable you have)
3 tbsp olive oil
1.5 tbsp maple syrup
1tsp smoked jalapeno powder or paprika
1 tsp sea salt
1 tsp sesame seeds
Thyme sprigs
3 tbsp pomegranate seeds
PREPARATION:
- Peel the vegetables and chop them into pieces about the same size.
- Mix together the oil, maple syrup, jalapeño powder, salt, sesame seeds, and thyme in a large bowl.
- Add the vegetables and toss until coated.
- Place on a baking sheet and bake in the oven for about 20 minutes at 400 degrees F.
- Toss and bake for 10 minutes more or until golden brown.
